2-3 tomatoes
1-2 red bell peppers
1-2 onions
1 garlic clove
½-1 dl Birkkala Whole Spelt Grain
(oregano or pizza spice)
½ l water + 1 vegetable broth cube
plenty of parsley
(Wash the tomatoes briefly in hot water and peel them)
Cut the tomatoes into cubes. Remove the seeds from the bell peppers and cut them into cubes. Cut the onion and garlic clove into small pieces. Heat oil in a pan and add the onions. Cook until translucent. Add the tomatoes and bell peppers, and cook them briefly in the onion-oil mixture. Add the whole grains rinsed in water and vegetable broth to the vegetable mix. Let the soup cook for about 50 minutes. Season the cooked soup with plenty of fresh parsley.
