1 large onion (approx. 90 g)
2 dl Birkkala Pearled Spelt
½ leek (approx. 130 g)
4-5 carrots (approx. ½ kg)
a piece of celery (approx. 150 g)
parsnip (approx. 150 g)
1 bell pepper (approx. 150 g)
approx. 4 dl water and ½-1 vegetable broth cube
(½ tsp salt)
1 bunch parsley
Cut the washed and pre-cleaned vegetables into small pieces. Heat the oil butter mixture and fry the onions, pearled spelt and vegetables. Add water and the vegetable stock cubes and allow the pot to simmer for about 20-30 minutes. Stir every now and then. Finally, check the taste and add a pinch of salt, if needed. Decorate with plenty of cut parsley. Serve the stew as is or as a side dish for fish or meat.
