Filling
5–6 small onions
5–6 small red onions
drop of honey / pinch of sugar
pinch of salt
Dough
150 ml water
ca. 10 g fresh yeast
pinch of salt
pinch of sugar
2 tbsp oil
ca. 400–500 ml (212–265 g) Birkkala Wholemeal Spelt Flour
Topping
ca. 100 g grated cheese (e.g. mozzarella)
oregano or pizza seasoning
Start with the filling: Cut onions into rings. Saute the onion rings in a pan with small amount of butter and oil until the onion is caramelized. Season with honey and salt. Let rest until cool.
Make the dough: Mix hand warm water, yeast, salt, sugar and oil until the yeast is completely dissolved. Add flour and knead well. Let the dough rise for a moment. Meanwhile grease the oven pan.
Split the dough into two pieces and roll until very thin. Set the pizza crusts on the oven pan and brush with oil. Sprinkle half of the grated cheese over the crusts. Spread the onion rings and season with oregano. Add another layer of grated cheese. Bake pizzas at 300 °C for about 10 minutes.
Garnish with fresh herbs, e.g. parsley, basil or chives.
